Food Friday's: Baked in a Box ~ Scottish Scones with Raisins


Scones are a wonderful snack that seem to be all too forgotten. If you've never had a scone let me describe its wonders to you. A scone has all the wonders of cookies, cakes and pies stuffed into a biscuit (I love biscuits!). They are also very versatile, if you get a good dough recipe, you can change your extras to anything you want. Fresh fruit, dried fruit, nuts, chocolate even flowers are good, experiment with your seasoning. As always have fun, and make something yummy.

My first scones you can see here, I made them for a tea party and they were probably the most delicious. The scones were simple and we used home made clotted cream and wild rose jelly. They were beautiful, delicious and fun to make!  


Ingredients:
  • 2 c. Flour
  • 1/2 c. Sugar
  • 1 tbs. Baking powder
  • 1 tsp. Salt
  • 5 tbs. Shortening
  • 1/2 c. Raisins
  • 2/3 c. Milk
-Preheat oven to 450 F or 232 C *
-Sift together dry ingredients and cut in the shortening.
-Add raisins and milk, mix well. If dough is still too wet to handle add in more 
        flour slowly till just tacky.
-Turn onto lightly floured surface and knead by hand till smooth.
-Role to desired thickness and cut to desired shape.
-Place on parchment lined pan and bake 10-12 min or till light golden brown*.

* For baking in a toaster oven, always start on the lowest setting as they tend to be a bit temperamental and unpredictable. If you find it's cooking too slowly turn up the temperature and keep an eye on your goodies. Also the cooking time will vary from toaster to toaster so always watch that first batch.
